Best Puerto Vallarta Resorts: Las Rosadas

I’m going to let you in on a little secret….

I have a favorite hotel in Mexico. Trust me, it’s a good one. It’s called Las Rosadas and while it’s not exactly in Puerto Vallarta, Puerto Vallarta is the closest major airport so I consider it one of the best Puerto Vallarta resorts on the beach. 

I try hard not to play favorites, but when I encountered Las Rosadas for the first time in March 2023, I knew I had been let in on something truly special. I’ve stayed at hundreds (yes, hundreds) of hotels and resorts in Mexico, and I can say without hesitation that Las Rosadas has something that not everyone has. That is, it has heart. 

My love affair with Mexico took off after I set off on a four-month solo trip with a backpack, a Lonely Planet book, and a “zero f*cks” attitude. It was a rite of passage. It was a coming of age at a time when I felt tremendously lost. Mexico became a massive part of my identity as I connected deeply with the enormity of the country. Thousands of years of history, ancient ruins, barefoot bungalows, palapa-topped restaurants where it was no shoes, no shirt, no problem. The food. Oh my god, the food. And the warmth of the people I met along the way. That energy, this ethos of Mexico, is something I feel does not always necessarily translate to its hotels. Luxury is a dime a dozen in Mexico these days, but not every luxury hotel gets the soul of Mexico just right.

Enter Las Rosadas. This plot of land on the coast of the ruggedly untamed Costalegre is a collection of five-star hilltop villas and an enormous stretch of beach. Impeccably designed, with the highest quality of service and attention to detail, Las Rosadas is everything you want from a five-star hotel, except that you still feel like you’ve stumbled to the ends of the earth, where you never need to wear shoes and a t-shirt and shorts more than suffice for dinnerwear. When I say it’s one of the best beach hotels in Mexico, I mean it with all of my heart. 

I fell madly in love with this hotel in 2023. It is, without a doubt, one of the best luxury hotels in Mexico. Read on to discover why.

I do not often give out the “Best Ever” designation. But in the case of one of the best Costalegre hotels, it seems appropriate. The vibe at Las Rosadas is something I’ve been searching for ever since my backpacking trip. I remember arriving in small beach towns and feeling completely relaxed, completely at peace, and completely like I could come as I am.

You do not often get that at luxury resorts in Mexico, especially the caliber of luxury resorts that are opening these days. There’s an air of looking a certain part, behaving a certain way, fitting a certain standard. At Las Rosadas, I felt like I could be completely myself.

The staff is small, so it’s easy to get on a first-name basis with everyone. And because it’s not a large property, you will feel like you have the place to yourself. You will feel like you’ve checked into your personal private retreat in one of the most beautiful beach destinations in Mexico. The staff goes above and beyond to make everyone feel like they are home. 

Puerto Vallarta Resorts on the Beach: The Amenities at Las Rosadas

Another superlative, but well-deserved. The amenities at Las Rosadas are truly stand-out. The design is spectacular, with gorgeous palapa-topped outdoor living rooms, woven bamboo mats, and even jaunty little sombreros perched atop a wreath of cacti. Local art and artisan-crafted furniture are perfectly placed throughout the villas and the communal area on the sand. Nothing about it is kitschy. It all works cohesively to create a funky, boho beach playground that is still as luxurious as it gets. The design is also totally romantic so I’d consider this to be one of the best resorts in Mexico for couples.

The beach and beach club are stunning. Each sunset will bring you to tears. Every angle is photogenic. And the beach club serves fantastic food, from fresh fish skewers and tacos to potent margaritas and crisp, cold rose. 

Las Rosadas does have a small communal pool, which is lovely, but each of the five villas has its own pool so chances are you’ll be spending your time at your private pool. The only accommodation without a pool is Casita Las Palmas, which is a bungalow-style room directly on the beach.

Best Resorts in Mexico for Couples: The Rooms at Las Rosadas

Las Rosadas has four oceanview villas, a beachfront casita, and one villa estate. The oceanview villas come in configurations of one- to three-bedrooms, and each has a full kitchen and private pool.

I stayed in the three-bedroom oceanview villa, which was an enormous amount of space with floor-to-ceiling windows, a huge pool deck overlooking the ocean, a beautiful outdoor shower, and a lower-level patio perfect for evening cocktails.

I have also had the opportunity to stay in Casita Las Palmas, which is a beachfront bungalow-style room. It gives a rustic, yet chic vibe completely different from the Santorini-style villas. It does not have its own pool, but it is about 10 steps from the front door to the ocean. Keep in mind the waves are thunderingly loud at night, so if you don’t find that peaceful then you may want to stay at one of the oceanview villas.

Best Beach Hotels in Mexico: The Dining at Las Rosadas

The dining at Las Rosadas is overseen by Laurent Manrique, a Michelin-starred chef with a slew of restaurants in San Francisco. Manrique may be a world-renowned French chef with accolade after accolade, but his approach to the cuisine at Las Rosadas is anything but pretentious. Instead, his method and menu concept embodies the spirit of Las Rosadas — fresh, simple, but undeniably elegant and memorable.

Picture freshly grilled fish and shrimp skewers, bright ceviches, hearty chicken enchiladas, and sizzling arrachera. Most everything is customizable and if you don’t see something you like on the menu, all you have to do is ask. But it’s doubtful that you won’t be wowed by everything.

Most meals are served right on the sand at Bar Mono underneath strings of lights, or by the roar of a bonfire. A separate restaurant, La Terraza, is a more traditional al fresco restaurant setting. The menu here is wood-fired pizzas and hamburgers.

Breakfast can be served on the sand or in the room. It’s usually a light breakfast of freshly sliced fruit and yogurt, but you can also request eggs, tortillas, and all the fixings.

Best Luxury Hotels in Mexico: The Wellness at Las Rosadas

Overall Score: Extremely Memorable

While there is no traditional spa at Las Rosadas, you can request to have massages in your room. This is an absolute must. I was lucky enough to have a massage arranged and it was the most melty, relaxing experience. Plus, it was right in the privacy of my villa so I didn’t have to travel very far for my post-massage nap.

The resort does not have a gym, which you know bothers me, but even I could chill out for a few days and forget about my typical fitness routine. A long walk along the sand and you’ll feel like you’ve done enough.

One note: I need to mention that while Las Rosadas is exquisite in every way, it is an expensive experience. The beachfront bungalow starts at $700 per night, while the oceanview villas are much more expensive at anywhere from $1,500 to $3,000 per night. That’s not uncommon for the highest level of luxury in Mexico these days, but I have to note that other resorts in that price bracket have a lot more amenities. Nearby resorts charge the same but have full-service spas, multiple restaurants, and more rooms. What I will say is that the experience at Las Rosadas is fully customizable, and the commitment to the spirit of Mexico is second to none. The more expensive rooms also have multiple bedrooms, so it can be something shared among groups of couples or fiends. Still, it is one of the pricier options, and I have to be honest about that.
